Air Fryer Chicken Legs With Buffalo Cauliflower Hot bites
Ingredients
For Chicken Legs
- 8 Chicken drumsticks (or 4 chicken legs (drumstick plus thigh)
- 1/2 tsp salt (plus more to taste)
- 2 tbsp olive oil
- 4 tbsp soy sauce
- 2 tbsp lime juice (or lemon juice)
- 2 tbsp honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4 tsp cayenne pepper
For Buffalo Cauliflower Hot Bites
- 11 oz cauliflower divided on florets
- olive oil
- 1 cup hot sauce
- 1 cup panko breadcrumbs
Instructions
For Chicken Legs
- In a large bowl, mix all of the ingredients except chicken, until well blended.
- Add the chicken legs. Mix and massage the drumsticks by hand for about 2-3 minutes, or until all the liquids are almost completely absorbed by the meat. Make sure that the chicken is evenly covered by the seasoning sauce. Massaging the chicken will allow the sauce to get quickly absorbed by the meat.
- Place the chicken legs on the air fryer rack, leaving some space in between. Depending on the size of your air fryer, you may need to do the frying in two batches
- Fry at 400F for 15 min. Flip and fry for 10 min more, again at 400F. Flip again and fry for 5 minutes more. If the legs look quite well-browned, you may not need to do the final 5 minutes of frying. Don't let the dark color confuse you, it's there because of the soy sauce.
- Remove the drumsticks from the air fryer and transfer them to a serving plate. Serve hot.
For Buffalo Cauliflower Hot Bites
- Pour cauliflower into a bowl and add olive oil, toss. This helps the hot sauce stick to the cauliflower and gives it more flavor.
- Pour hot sauce over the cauliflower and toss until evenly coated.
- Pour breadcrumbs over cauliflower and toss well. This will help your cauliflower bites have a bread-like coating on them that browns nicely.
- Add cauliflower to the air fryer and set to 400F. Toss them every 5 minutes or so, and they take about 20 minutes to cook.
