Green peas are known for their decent level of of heart-healthy minerals, such as magnesium, potassium and calcium. Combine that with peanuts, which naturally have excellent amount of plant-base proteins, but also various minerals and vitamins, and there you go – Perfectly balanced meal.
Besides those two, there are a lot of different nutritious values coming from other vegetables, and of course pumpkin seeds, and we all know how healthy those are.
Nice and creamy soup, ideal as an appetizer, but also as a healthy snack in the middle of a working day.

Peas And Peanuts Soup
Ingredients
- 1 lbs green peas frozen
- 7 oz heavy cream
- 1 onion
- 4 tbsp butter
- 0,5 lbs mix of vegetables frozen (carrot, broccoli and cauliflower)
- 4 cups chicken stock
- 3,5 oz peanuts fried
- 2 oz pumpkin seeds roasted
- salt and pepper to taste
- dry vegetable seasoning to taste
Instructions
- Cook the green peas, and drain. Set aside.
- Melt butter in a pot, than add onion and let it cook for a couple of minutes. Add water gradually.
- When onion is soft, add frozen vegetable mix and season with salt, pepper and vegetable seasoning. Cook for about 3 to 4 minutes.
- Add chicken stock and let it simmer.
- While you're waiting for vegetables to get cooked. Mash green peas and add heavy cream gradually with liquidizer/blender.
- Add peanuts and then pumpkin seeds.
- Bring to boil and serve warm.
