Scramble with Eggs, Tomato, Spinach, Broccoli, Cheese, and Potato Baked with Herbs
Ingredients
- 2 pcs eggs
- 8 leaves Spinach
- 180 g Potato
- 1 pinch Salt
- 1 pinch Pepper
- 1 tbsp Mixed herbs
- 50 g Broccoli
- 45 g Gouda cheese
Instructions
- Scramble eggs, add chopped tomato and spinach (5-8 leaves), add salt, pepper to taste, steam or cook on Teflon without oil (or with minimum oil).
- Put slices of cheese and chopped raw broccoli on the prepared scramble.
- Cut potatoes (or sweet potatoes) into slices, cover with herbs and salt, sprinkle with oil (1 tsp. for all the potatoes). Bake in the oven for 25 minutes at 360°F/180°C.
Notes
If you're allergic to eggs, try tofu scramble (100 g tofu + 25 g mozzarella on top, fry with 1 tbsp oil). If you have allergy to dairy products, substitute hard cheese for dairy-free or aged cheese
